I would love to change my map textures, but i have some questions about that:
1-Where can i get tb5 textures used by ezquake, separated in folders?
2- What program to edit the textures? (it only comes to my mind photoshop)

1) ezQuake comes with TB5 map textures? Don't you mean nQuake? Anyway, anything that's included can be extracted to a separate folder if you really want to. It'll either be in a .pak (which you need a seperate program to open) or .pk3 (can be opened with e.g. winzip if you rename to .zip).
2) Photoshop is perfectly fine at editing textures, but any decent image editing program will do.

included with nQuake, if you want the original files in a lossless format, download the
QRP texture pack.
Textures put in x:\quake\qw\textures\ will load for all maps, if you want textures for individual maps you should place them in x:\quake\qw\textures\mapname\
